Raw Kale Chips

Kale chips are our family's favorite raw and living food snack. It's quick and easy to make; very delicious and nutritious as well. Even if you're not a raw foodist, these raw chips will win you over from at least corn and potato chips. They are great coated with olive oil and salt, but for a more flavorful version, use my recipe below.

Raw Kale Chips

2 large bunches of kale
5 stalks of celery
1 red bell pepper
1 small or 1/2 medium red onion
1/4 cup Bragg's Liquid Aminos
3/4 cup water
4 tbsp nutritional yeast
2 tbsp Mexican seasoning (The Spice Hunter brand)
Juice of 1 lemon
1/2 cup of cashews

Our favorite chips
Blend ingredients except kale in VitaMix until smooth. Wash kale. Remove kale leaves from stem, tear leaves to desired size ( 1-2 inch pieces) and coat leaves with sauce. Dehydrate for 12 hours on 105 degrees. Store leftovers in airtight containers to prevent rehydration and sogginess.

Spice Hunter Mexican seasoning is technically not labeled raw, however they do not irradiate their ingredients and it's 100% organic. It contains the following spices: cumin, onion, garlic, paprika, cilantro, red pepper, coriander, oregano.

If you ever wondered how to substitute fresh herbs with dried herbs, use the following rule:
1 T fresh herbs = 1 t dried herb leaves, or 1/4 T ground dried herbs

Remember, take care of your body. We don't need to suffer from these preventable diseases. I'm not a nutritionist, but from my personal experience, you cannot go wrong by eating beautiful and colorful raw fruits and raw vegetables.
